Sixty-eight sweets out of one chapter, and the same few rules run through the lot. The moulded puddings open it: almond, biscuit, cabinet, and a fruit pudding built in layers that must each set before the next goes in. Then the English register, the suet cases boiled in a basin and the plum pudding steamed four hours; then the bread puddings of Paris, the Rhineland, and Scotland; then the starch puddings, where tapioca, sago, semolina, vermicelli, noodle, and rice all take the same treatment. The Saxon base opens the souffléd puddings, a panade dried hard and carried by beaten whites, and it stretches to almond, lemon, ginger, chestnut, and a dozen more. The soufflés follow, cream-based or fruit-based, and the timbales close the chapter with fruit in a case of paste or hollowed brioche. Four things decide them all: a bain-marie that trembles and never boils, whites folded late and gently, a mould buttered and dusted so the pudding climbs and releases, and a moderate oven so the heat reaches the centre by degrees. The original assumed a pastry brigade and moulds by the shelf; a pudding basin, a roasting tin of hot water, and one honest oven do the same work. C'est la même grammaire. À table!
