Escoffier's sweet omelets brought down to one home stove, from the pan straight through to the ice. First the folded ones: sugar, a pinch of salt, and heated rum lit at the table; apricot jam sealed inside and branded in a lattice; mincemeat, cream, and orange rind for the Christmas table. Then the souffléd omelet, yolks and sugar beaten to the ribbon and carried by stiff whites, piped and baked as an oval mound. Then the surprise omelets, the Guide's baked Alaska: a Génoise cushion holding ice cream under a thick meringue coat, sent into fierce heat so the outside colours before the heat can reach the ice. Norwegian, Mylord with stewed pears, tangerine ice ringed with glazed fruit, cherries flamed in kirsch, Milady's peaches set in raspberry ice, the Bombe Vésuve with its burning Jubilee cherries, Elizabeth under a veil of spun sugar, the Islandaise with rum alight in a meringue case, and the sylphs' savarin crowned with an iced strawberry mousse. The pannequets close it out: thin crêpes spread with jam, frangipane, or Italian meringue, rolled, cut into lozenges, and glazed. Three things decide the whole lot: whites beaten stiff and folded rather than stirred, ice frozen hard under meringue laid thick, and a fast fierce heat at the finish. The original assumed a salamander; a grill turned high does the same work. C'est la même grammaire. À table!
