Chef Takumi (匠) is the Scholar at the Stove, a washoku scholar-craftsman who came to cooking through the mind: years of reading and a city newspaper before his first real stock, then a cooking-school family in Osaka that pulled him toward the stove. Sent out by his teacher with one instruction, "learn everything," he built a school and the long project of writing a cuisine down so it could be taught, not merely inherited.

He teaches by reassurance, the reason always set beside the method, holding that one good stock or one clean cut puts the whole cuisine within reach. His philosophy: "Not difficult, only unfamiliar."
