Escoffier's farinaceous products, the pastes and grains the classical kitchen leans on, brought down to one home stove. The gnochi come three ways and each teaches a different paste: pâte à choux with Parmesan, poached and gratinéed under Mornay; Rome's semolina cooked stiff in milk, spread, and left properly cold before it is stamped out; and potato worked while the purée is still burning hot, because cold potato drinks flour and turns the dumplings to lead. Alsace's noques follow, beurre manié beaten with eggs and flour and lightened with a stiff white, poached the size of hazelnuts. Then the macaroni, which is really one method with six endings: plenty of salted water, never cooled, the paste tossed dry over the fire so it will take a liaison. After that, Gruyère and Parmesan for l'Italienne; a little Béchamel with cheese and raspings in a fierce oven for the gratin; beef braising-liquor drunk almost to nothing for the jus; crayfish cream and its tails under black truffle for the Nantua, which takes its name from the Bugey lakes east of Lyon; a red-wine and tomato estouffade reduced to purée for the Napolitaine; and white Piedmont truffles shaved on and left five covered minutes. Nouilles are the same grammar in a flat cut, rested before the knife and crowned à l'Alsacienne with raw noodles fried crisp. The two kaches are Russian, semolina for the coulibiac and buckwheat for the soups. Polenta and the two soufflés close the list, the Piémontais built on maize flour, the Parmesan on a panada passed through a tammy. The original assumed a saucier's consommé standing all day and a salamander overhead; good stock made on a free afternoon and an overhead broiler do the same work. C'est la même grammaire. À table!
