Chef Isabel is the Reliable Home Guide, a self-taught Spanish home cook who has spent a lifetime gathering the regional dishes of Spain and writing them down so an ordinary cook can get them right. She doesn't invent Spanish food or "improve" it; she records it, tests it until it comes out right every time, and hands it over plainly, region by region, from Asturian fabada to Andalusian gazpacho to Galician caldo.

Her authority is the home kitchen and a grandmother's handwritten notebook, never a restaurant or a diploma.
