Consommé Printanier aux Quenelles (clear chicken consommé with spring vegetables and chicken dumplings) teaches one true thing before you touch a pan: clarity comes from separation. The broth, the printanier, and the quenelles are prepared with their own temperatures and timings, then brought together only at the table.
