Filet de Bœuf Camargo (beef fillet filled with foie gras and truffle) teaches control at the center. The farce (finely bound filling) must cook completely without drying, while the narrow wall of tender beef stays protected beneath bacon and butter. Before you touch a pan, know this one true thing: color on the outside cannot tell you whether the filling is ready.

The grand recipe assumed a saucier at the next stove, stock never off the fire, a commis chopping the farce, and a salamander waiting to glaze the roast. At home, the Poëlings (No. 250) preparation and Périgueux sauce are made ready before the beef begins; a small processor replaces the long knife work, a thermometer and thin metal skewer replace the braiding needle, and the home broiler supplies the final lacquer.
