Guanajuato, in the Bajio, is where this plate stands on its feet: corn tortilla, egg, guajillo salsa, frijoles refritos, queso ranchero. Not flour tortillas. Not yellow cheese. Not sour cream. This is a breakfast you would recognize in a fonda near Mercado Hidalgo or on a worn table in Dolores Hidalgo, with the salsa served in a little majolica bowl and the beans shining from the manteca.
