The poppy seeds are the first thing you notice, little black sparks caught in a butter-yellow crumb. Then the cookie breaks, dry and tender at once, and you understand why a tin of korzhyky on the table never lasts as long as anyone claims it will. This is not fancy baking. It is the kind that sits beside tea, coffee, homework, grief, gossip, everything.

Pisochne tisto means sandy dough, and that is the whole point: flour rubbed with cold fat until it looks like fine crumbs, then brought together quickly so it bakes short, not bready. Work it too warmly and the butter disappears into the dough; keep it cool and the cookie keeps that crumbly bite. Aunt Nadia wrote once, maddeningly, "knead only until it listens." She was right. Stop when it comes together.

These are Lviv cookies, from the western baking shelf rather than my southern litnya kuhnia, the summer kitchen, but I trust them completely. Daria Tsvek knew how home baking actually works: make enough, store it well, feed whoever walks in. Roll them a little thick, cut them simply, and bake until the smell changes from flour and butter to toasted poppy and golden edges.
