This dish is from Mexicali, Baja California. Not from any other Mexico, not from a generic 'fusion' restaurant, not from a Pinterest board labeled Asian-Mexican. From Mexicali, the border city that built La Chinesca, the largest Chinatown in Mexico, when thousands of Cantonese laborers arrived in the early 1900s to dig the irrigation canals of the Imperial Valley. They stayed. They opened restaurants. They cooked Cantonese food with the ingredients Baja California had: flour tortillas instead of rice paper, Mexican chorizo instead of Cantonese sausage, the chiles and limes of the desert north.
The flour tortilla is not a compromise here. It is the dish. Baja California is wheat country, the way Oaxaca is corn country. The norte has been making flour tortillas for two hundred years. When the Chinese cooks of La Chinesca needed a wrapper, the flour tortilla is what was on the table, and the rollo primavera mexicalense was born from that meeting. Thin tortilla, hot oil, the wrapper goes hard and crackling around a filling of chorizo and cabbage and sprouts. Bite through it and you taste both kitchens at once.
Do not call this fusion. Fusion is what a chef does in a hotel restaurant when he wants to look clever. This is what working people in Mexicali have been eating for a century. There is a difference. My notebook from the trip I took to Mexicali in 2012 has a page from a senora named Lupe Wong, third generation Chinesca, who told me the only rule is fry them hard. If they bend in your hand, they are not done. Asi se hace y punto.
