In Italy, lentils are never just lentils. Their small, coin-like shape has made them symbols of wealth and good fortune for centuries. Every New Year's Eve, Italian families gather around steaming bowls of this soup, believing each lentil consumed brings prosperity in the year ahead. Whether the superstition holds, I cannot say. But I can tell you the soup is worth making regardless of the calendar.

This is peasant cooking at its finest. A handful of dried legumes, some good ham, aromatic vegetables, and patience. The lentils require no soaking. They cook directly in the broth, releasing their starch to create a naturally creamy texture without a drop of cream. The ham provides backbone. The soffritto provides soul.

I learned a version of this soup from an Italian grandmother in the Umbrian hills who measured nothing and tasted constantly. She would add water by eye, adjust seasonings by instinct, and produce a different soup each time. All of them were extraordinary. This recipe gives you her method in more precise terms, but once you've made it twice, trust your own palate. Add more rosemary if you love rosemary. More garlic if your guests are brave.
