In Southern Jutland, there comes a moment at every proper gathering when someone reaches for the snaps bottle and the coffee cups go quiet. Not the everyday cups. The good ones. This is when the kaffepunch begins, and if you've never seen it made, you're about to understand something about the Sønderjysk character that no history book captures as well.

The ritual is simple and precise. A coin goes into the bottom of a cup. Strong black coffee is poured over it, slowly, until the coin vanishes from sight. Then snaps is added, in a thin stream, until the coin reappears. That's your drink. The coin sets the ratio. The coffee must be strong enough to hide it, and the snaps generous enough to bring it back. Too weak on either side and the ritual doesn't work.

What I love about kaffepunch is that it belongs to the table, not to the kitchen. You make it in front of your guests, in the room where the conversation is happening. The pouring is part of the pleasure. Everyone watches the coin disappear and reappear. Everyone has an opinion about how much snaps is enough. This is a drink that makes people lean in and laugh and argue gently about nothing that matters. That's Sønderjylland in a cup.

Don't overthink the technique. Brew the coffee strong, pour with patience, and trust the coin. You'll know when it's right.
