Jalisco gives you these beans from the home kitchens of Guadalajara, Los Altos, and the market fondas where breakfast starts before the city is fully awake. This is not a decoration on the plate. Frijoles refritos are infrastructure. They hold the egg, fill the tortilla, sit beside the carne en su jugo, and stretch a meal when money is tight.

Use frijol bayo or mayocoba, the pale beans common across western Mexico and the Bajio. Pinto will work if that is what your market has, but understand the compromise: bayo gives a silkier mash and a warmer, earthier flavor. Preguntale a las senoras del mercado. They know which sacks are fresh and which beans have been sitting too long.

The technique is the dish. First you make proper frijoles de la olla with onion and garlic. Then you fry chopped onion in manteca de cerdo until sweet, add the beans, and mash while the fat and starch become one thing. Work the bean broth back in slowly. Too much at once and you get soup. Too little and the beans turn heavy. My mother wrote in her Jalisco notebook: 'caldo poco a poco.' Broth little by little. She was right.

La manteca es el sabor. Vegetable oil will fry the beans, yes, but it will not give you the same gloss, the same rounded flavor, the same smell that tells people breakfast is ready. No me vengas con atajos. These are weeknight beans, budget beans, comfort beans, and they deserve to be done correctly. Saber cocinar es saber vivir.
