You look at quiabo and already hear the little voice: isso não é pra mim. It will get slippery. The chicken will dry out. Mineira food belongs to somebody else's grandmother. No. A gente is going to take that excuse apart with a hot pan and a little discipline.

I learned to cook as a grown woman, with a cheap caderno open beside the stove and the confidence of a person who had already ruined onions in several creative ways. So I don't trust mystery. I trust receitas que funcionam: dry the okra, sear it hot, brown the chicken in batches, build the refogado, and put the quiabo back only at the end. Cooking isn't a gift, it's something you learn. Anota aí.

This is comida de verdade from the pê-efe family: rice, beans, chicken, something green, and here the something green fights back a little. Good. The method teaches you why each thing happens. Dry okra meets hot fat and the baba calms down. Crowded chicken steams and turns grey, so we give it room. Onion and garlic murchar in the fat because flavor starts there, not in a cube pretending to be dinner.

Serve it with angu to catch the sauce, plus arroz soltinho, feijão, and couve if you're solving the whole plate. Nothing fancy. Nothing unreachable. Just a pot that smells like a home kitchen doing its job.
