Oaxaca's slow-candied fig-leaf gourd, simmered for hours in piloncillo and Mexican canela until the strands turn amber and translucent. The dulceria classic of the Sierra Norte and the Valles Centrales.
This is a Oaxacan dulce. Specifically from the Sierra Norte and the Valles Centrales, where chilacayota grows on long vines along the milpa fences and where every cook past a certain age knows what to do with one when it ripens.
Chilacayota is not calabaza. It is not zucchini. It is the fig-leaf gourd, Cucurbita ficifolia, with a hard mottled skin and pale flesh that pulls into long fibers like spaghetti squash, only firmer and more deliberate. You cannot substitute another squash here. The texture is the dish. Without those amber strands holding their shape in the syrup, you have made jam, not dulce de chilacayota.
The syrup is piloncillo, canela, clove, and orange peel. In the Sierra Norte, some senoras add a fresh fig leaf to the pot, a quiet nod to the plant's name. The dulce simmers slow, two hours at least, until the strands drink the piloncillo and turn glossy and the kitchen smells the way a Oaxacan dulceria smells in October. This is patience work. La cocina no es decoracion, es trabajo.
My mother did not make this. She was from Jalisco and Jalisco does not have chilacayota the way Oaxaca does. I learned it from a senora named Dona Esperanza in Teotitlan del Valle, who served it to me cold in a small barro negro bowl with a spoon, on a Tuesday afternoon, after I had spent the morning watching her press tortillas. She told me her grandmother made it in copper, over wood, for two days. I am asking you for two hours. Saber cocinar es saber vivir.
