Cretan rakomelo is tsikoudia warmed with honey and winter spices, the drink you meet in the mountain villages when the cold comes down hard. It is not a cocktail. It is raki made kind for the throat, sweetened with thyme honey and scented just enough with cinnamon and clove.
The method is simple, but it has one rule. Warm it low and never let it boil. The honey needs heat to loosen and disappear into the spirit, but hard heat steals the alcohol and bruises the fragrance. Keep it below a bubble and the drink stays clear, strong, and round.
Use real Cretan tsikoudia if you can. If not, choose a clean Greek tsipouro without anise, but know you have moved away from Crete. Λίγα και καλά: a good spirit, good honey, and a small pan watched properly.
