The name already tells you the joke, if you're listening. Broodje gezond means healthy roll, and every Dutch school canteen, railway kiosk, and broodjeszaak (sandwich shop) has spent decades proving that health can arrive with ham, cheese, egg, and a streak of mayonnaise. For obvious reasons, we believed this completely.

But let me tell you a secret: the broodje gezond is not a diet argument. It's a little social document from the Dutch lunch hour, that narrow kingdom between brown bread from home and a kroket from the wall. Lettuce, cucumber, tomato, and egg made it look fresh and responsible; ham and young Gouda made it worth eating. This is Dutch pragmatism between two halves of bread.

There is no grand technique here, only order. Butter or mayonnaise keeps the bread from going soggy, lettuce makes a dry floor for the wetter things, tomato gets a pinch of salt because supermarket tomatoes need instruction, and the egg goes on top where you can see it. Hou het altijd simpel, always keep it simple. If your roll is fresh and the vegetables are crisp, the sandwich has already done its honest work.
