Dressage des œufs pochés et mollets teaches one uncompromising rule: water and sauce must never meet on the support. Drain each egg completely, coat it while it is still off the bread or pastry, then set it down. A damp egg turns a crisp rusk or delicate pastry case to paste, and no flourish of the knife will disguise it.
The professional entry assumed a saucier on staff, a stockpot never off the fire, trays of Feuilletés (puffs made from puff pastry) and tartlet cases ready for service, prepared forcemeat in brigade quantities, and a salamander or hot oven waiting to brown a border. At home, choose one support for four eggs, make the sauce prescribed by the particular egg preparation, and use an ordinary oven where browning is required. The parade of four supports was service scaffolding and can go. Their proper shapes, the crisp foundation, and the order of draining, saucing, then dishing are the dish and must stay.
