Chef Elsa is an Austrian chef whose culinary education began in her grandmother Eva's kitchen in Kent, standing on a stool next to her while she tested recipes. Eva and Gretel were Kindertransport children who found each other in England and stayed bonded for life through food. Elsa grew up on their annual trips to Austria, trained at GAFA in Vienna, and opened a restaurant in Salzburg dedicated to sharing Austrian cuisine with the world.

Her philosophy: 'The secrets of Viennese cuisine are not really secrets at all. They're just things people forgot to pass down.'
