Place the anise and fennel seeds (and caraway if using) in a dry skillet over medium heat. Shake the pan frequently for 2 to 3 minutes until fragrant and slightly darkened. If refrigerated, let the dough sit at room temperature for 1 hour before shaping. Turn the dough onto a lightly floured surface and divide in half with a bench scraper. Working with one piece at a time, pat into a rough rectangle about 8 by 10 inches. Fold the long sides toward the center like a letter, then roll tightly from the short end, pinching the seam closed. Tuck the ends under and place seam-side down on a parchment-lined baking sheet. Repeat with the second piece. Cover loosely with oiled plastic wrap.
Let the shaped loaves rise until nearly doubled, 45 minutes to 1 hour at room temperature. The dough is ready when it looks puffy and holds a gentle fingerprint without springing back entirely. Don't rush this step. Underproofed rye bread turns dense and gummy. If the indent fills back immediately, give it another 15 minutes.
Position a rack in the center of the oven and preheat to 375°F (190°C). Place an empty metal pan on the bottom rack. This will hold water to create steam during the first minutes of baking. Brush the risen loaves with the egg white wash, coating evenly. Using a sharp knife or lame held at a 45-degree angle, slash each loaf with three diagonal cuts about ¼ inch deep. The cuts should feel decisive. Hesitation tears the dough.
Slide the baking sheet into the oven and quickly pour 1 cup of hot water into the metal pan below. Close the door immediately to trap the steam. This burst of moisture keeps the crust pliable during the first phase of baking, allowing maximum rise. Bake for 15 minutes with steam, then carefully remove the water pan.
